Trousselle’s 30 year old Aligoté vines grow at an even higher elevation than his other plots in the Hautes Côtes de Beaune. The limestone bedrock core, which is the foundation of the cliffs above his village of Orches, provides the mineral backbone that makes this the quintessential go-to white Burgundy. Plenty rich, but the tense vibrant expression of this wine is completely enchanting. Quaffable now, but a few years in the cellar will reward those that are patient.
