It possesses bracing acidity backed up by the intriguing saline texture and flavor that sherries from this town are known for. The richness, derived from and average time of 9 years in solera, is perfectly balanced by nutty, citrus flavors that finish up chalky and dry.
Held in the same Solera as the Clásica for an added few months at the end of the aging process, this “En Rama” (unfiltered & bottled by hand) bottling exhibits a fuller and more intense expression of the same spectrum of aromatics and flavors. This is an unbridled, refined and extremely persistent rendition of what Manzanilla must have tasted like 100 years ago.
