Les Biaumonts is a single vineyard site near the village of Saint Bris, composed of Kimmeridgian soil, meaning chalky limestone and clay. The vineyard sits at 250 meters elevation and the vines are 35 years old. The grapes are hand-harvested, fermented with indigenous yeasts, and aged in neutral Burgundy barrels.
As with all of Goisot’s wines, this is a serious over-achiever. High levels of mineral and earth notes with some floral notes. Gorgeous stone fruit flavors with a saline edge that finishes up long and pristine. This is very classy Bourgogne Blanc that would put most Chablis to shame.
