100% Listán Negro. 80+ year old vines. Cordon Trenzado trained vines.
Vineyard: El Chibirique is a small (.4 hectare) single-vineyard amphitheater. 380-430 meters elevation. Eastern facing exposure. Clay over volcanic bedrock.
Vinification: 100% whole cluster fermentation. Aged in 500L neutral French oak puncheons.
This is the most Burgundian style of the lineup showing ripe, forward dark red fruit and slight reduction in the nose. For this, a few minutes in a decanter will make this wine shine in its youth. Slight herbal notes grace the nose and help make this a truly fine and complex wine. Long, tense and showing good precision in the mouth, this wine will benefit from aging like most fine wines.
