NV Cava, Brut Reserva
| Rimarts is a small artisan producer of Cava, located in Sant Sadurnì d'Anoia, in the Penedès region south of Barcelona. This is a family operation run by two brothers, Ricard and Ernest Martinez. One leans towards the "marketing" while the other concentrates more on the winemaking, but basically this is a hand's on operation, run out of a small building with cellars located in an industrial part of town.
It is clear from the start that these guys know what they're doing, where there are no frills, just hand-made Cava that would put many top-name Champagnes to shame. There is no compromise when it comes to bottle aging where the lowest cuvée in the cellar gets 24 months on its lees. Riddling and disgorging are done entirely done by hand, and the attention to detail is striking. The firm possesses old-time contracts for grapes from the same growers that their father worked with before them, so there is no chance of compromise in this area where the monster houses are gobbling up all of the grapes.
We were struck by the finesse and complexity of their wines. All quite full, but with a delicate mousse, good chalky texture and great length. Roughly 5,000 cases are produced a year.|
