Soils: Clay over firm chalky limestone bedrock.

80% fermented in temperature-controlled vats, 20% neutral oak barrel fermented.
Brilliant gold tinted color showing ripe cooked quince, citrus and bright acidity. Ripe, but showing nice grit and a large dose of minerals.
