30 year old vines. Estate grown fruit.
Aging: 1 year. 84% Stainless vat, 16% large format barrels (2-5 years old).
Named after the 12th century church in Chablis, this cuvée is produced from estate grown grapes from vineyards located in the villages of Maligny, Chablis & Fleys. The chalky soils of this area combined with the typical continental climate make for a beautiful expression of Chardonnay that is unique in the world. Fine, mineral, elegant, powerful & racy are only a few of the adjectives that describe this and all great Chablis wines.
The nose is rich and full, with greenish notes that balance nicely with the fine mineral edges and ripe melon fruit. In the mouth, the wine is full with refreshing acidity and great length. Drink with all dishes that prefer a crisp white wine especially oysters and all seafood. Very approachable now, but will develop nicely for 3-8 years.
